Der symbios chip ist ein alter Bekannter...
NCR/Symbios 53c400/53c400a or Domex DTC3181E/L/LE (DTCT436/436P) ISA SCSI card
This card is supplied by Mustek (and other vendors). It’s supported since
Linux 2.2. The SCSI cards are supported by the module g_NCR5380. It’s
necessary to tell the kernel the io port and type of card.

You need a SCSI adapter for the SCSI scanners. Even if the connector is the same as that of parallel port scanners, connecting it to the computers parallel port will NOT work.
Mustek SCSI scanners are typically delivered with an ISA SCSI adapter. Unfortunately, that adapter is not worth much since it is not interrupt driven. It is (sometimes) possible to get the supplied card to work, but without interrupt line, scanning will be very slow and put so much load on the system, that it becomes almost unusable for other tasks.
If you already have a working SCSI controller in your system, you should consider that Mustek scanners do not support the SCSI-2 disconnect/reconnect protocol and hence tie up the SCSI bus while a scan is in progress. This means that no other SCSI device on the same bus can be accessed while a scan is in progress.
Because the Mustek-supplied adapter is not worth much and because Mustek scanners do not support the SCSI-2 disconnect/reconnect protocol, it is recommended to install a separate (cheap) SCSI controller for Mustek scanners. For example, ncr810 based cards are known to work fine and cost as little as fifty US dollars.
For Mustek scanners, it is typically necessary to configure the low-level SCSI driver to disable synchronous transfers (sync negotiation), tagged command queuing, and target disconnects. See sane-scsi(5) for driver- and platform-specific information.
The ScanExpress models have sometimes trouble with high resolution color mode. If you encounter sporadic corrupted images (parts duplicated or shifted horizontally) kill all other applications before scanning and (if sufficient memory is available) disable swapping.

So eine hatte ich auch bei meinem als Highscreen gelabelten Microtek Flachbettscanner, den ich für seinerzeit 1000 DM bei Vobis gekauft hatte.
Betrieben habe ich den Scanner dann aber meist am AHA-1542CF, später am AHA-3940UW.
Ich habe solche Karten auch schon bei den SCSI ZIP Laufwerken gesehen.

das Bauchgefühl kann ich bestätigen. Hier habe ich noch einen Mustek MFS6000CX SCSI-Scanner. Dazu gehört genau diese Karte

Ist aber schon eine schöne Karte, in der Hinsicht, daß SCSI teuflisch teures Profi-Zeugs war. Hier noch was zum eigentlichen und eigentlich einzigen Bauteil: NCR 53C400 SCSI Host Adapter
Jein... SCSI in richtig war natürlich teuerer, als das IDE-Geraffel.

Naja, diesen 53C400 Controller haben wir damals auch in unseren Industrie-Rechnern eingesetzt (auf einem eigenen Board).
Natürlich kann man den nicht mit Adaptec vergleichen, aber das war schon ein vollwertiger SCSI-Controller und mit den damals üblichen lahmen SCSI-Platten kam der locker mit. Von NCR gab es das passende BIOS zum Ansteuern von SCSI-Platten im Quelltext dazu.
